The other day I was really itching to bake something different. Something that I hadn’t made in a long time, but unfortunately, I also hadn’t done any grocery shopping. Sifting through my pantry and cabinets to look for a few ingredients to slap together something sweet, I found a can of pie filling and box of yellow cake mix. It immediately took me to the summer after my senior year of high school when I worked the buffet at Anthony’s Pizzeria in hometown of Manteno, Illinois. My boss Kimmie taught me how to make a super simple, three ingredient, dump cake that was a real crowd-pleaser. She taught me how to make it with blueberry pie filling, but I could only find apple in my pantry. I also found some cinnamon and brown sugar and got a little creative. I actually impressed myself with the outcome on this super easy cinnamon apple dump cake.
I started with the pie filling and created an even layer of apples/filling. Then I added a layer of dry yellow cake mix and tossed a few sprinkles of a cinnamon & brown sugar to really bring forth the cinnamon apple flavor. Top the cake mix with a layer of butter and bake in the oven for roughly 40 mins at 400 degrees.
Let it cool — just enough to enjoyed warm with a scoop of ice cream.
