With all the holiday celebrations that happen at the end of the year, I feel like I’m constantly baking for different food-centered events. I’m always trying to make something different for each potluck I attend, but sometimes I run out of ideas and force myself to mix up one of my typical dishes and create something new. I’m not going to lie either, sometimes they don’t always work out.
Last week I showed you one of my signature baked goods, the Cinnamon Apple Dump Cake. I had two events in one week and told myself I’d try to bring two separate dishes — even if they ended up being really similar. Since I was kind of digging to put something together at the last minute, I decided to combine a boxed mix from my pantry and my dump cake recipe to create these super simple and delicious gooey cinnamon apple muffins.
To make the muffins, I mixed a box of Krusteaz Cinnamon Swirl Crumb Cake & Muffin mix for the base and filled my muffin tins about a fourth of the way. The muffin mix comes with a cinnamon swirl blend, so I added a tiny bit of that.
Then I added a dollop of apple pie filling and topped it with some more cinnamon swirl mix and a small layer of dry yellow cake mix. Then I topped it with a sliver of butter and popped them into the oven for 35 minutes at 350 degrees.
I’ll be honest, I was pretty uncertain how they’d turn out. I was worried the filling would require more time and heat and burn the bottom layer of the muffin mix. To my surprise, they turned out PERFECT. They had an amazing apple, butter and cinnamon flavor and the consistency of gooey muffins. I was obsessed.
I highly recommend serving them with a little caramel or nut topping or even a small scoop of ice cream.
